Easter was wonderful....7 am mass.. baskets full of goodies..and a few special treats..Claire and Mary Grace got a new Webkinz to play with for me to get on their account and play pizza palace..Emily got a new pair of earrings..and Logan got a mega pack of CD-RW's..seriously..he was beyond thrilled..
My brother Chris and Janna and their kiddos came down for lunch..and it was so tasty..On Good Friday..we went and ate at Sweet Tomatos with some good friends...best non meatfood..ever..and I got to eat their awesome broccoli salad..that I live for..came home found the recipe and made it for Easter dinner..I am so full of broccoli..I could pop..guess you can have to much of a good thing..but, here is the recipe..in case you loooove it as much as me..
Joan's Broccoli Madness Salad
Souplantation aka Sweet Tomatoes
6 - 8 servings
1 bunch uncooked broccoli, cut into florets
1/2 cup crumbled cooked bacon
1/2 cup cashews
1/3 cup raisins
1/4 cup chopped red onion
Dressing
1 cup mayonnaise
1/3 cup sugar
2 tabl. apple cider vinegar
Mix the broccoli, bacon, cashews, raisins and onions in a large bowl. In a second bowl, beat dressing ingredients together gently until smooth.
About 10 minutes before serving, toss the salad with the dressing to allow flavors to meld. Serve on chilled salad dishes.
And do you notice anything particularly amazing about this picture..at first sight you might think..no..nothing..but look at Mary Grace and Logan..standing close acting like they love each other..She is not screaming at him..and he is not teasing her..yes..it truly was an Easter miracle..
And this is how the day..ended..
Hope your day was full of wonder..He has risen, He has risen, indeed.
